7 Days of Salad {day 4}

Breakfast

Banana Nut Berry Salad: Ā Doesn’t this look delicious? Ā So, I started out with a banana sliced into circles. Ā Then set some fresh organic strawberries next to it. Ā Then I defrosted some organic raspberries and actually warmed them a little. Ā I poured that along the side and then I topped it off withĀ Willamette Valley Granola in Honey Nut. Ā I can not rave enough about these Willamette Valley granolas. Ā I hate when it’s crazy crunchy and this stuff is perfect. Ā I always love having some puree or something moist (ie the raspberries here) to soak into it to for a more moist out by the end. Ā And it’sĀ organic + GMO free too.

Rating: 9/10 stars. Ā Maybe the only reason it didn’t get that last star was because it was pretty soggy by the end. Ā But I think a little less raspberries would do the trick. Ā The flavors balanced great. Ā Lots of great fruit and hearty granola kept me feeling full. Ā It actually felt more like a dessert too! Yum!

Lunch

Sweet and Salty Summer Salad:Ā  Ok, I cheated. Ā No lean protein in this lunch. Ā But I did add some great heart healthy nuts! Ā This was shockingly amazing. Ā I just put some Spring mix in the bowl and topped it with some roasted, salted sunflower seeds. Ā Then sliced up watermelon and arranged it on both sides. Ā Then I sprinkled a little sugar on the watermelon. Ā The sweetness of the fruit/sugar and the saltiness of the seeds was fabulous together!

Rating: 9/10 stars. Ā When I was making this I was wondering what I was really doing. Ā It’s a little random. Ā But this was delicious. Ā I would even recommend this for a snack or a summer party salad. Ā The salt and sugar just brought it to a whole new level. Ā The only thing I would leave out would be the lettuce. Ā But it’s salad so lets just pretend it’s the garnish. Ā I forced down the lettuce at the very end all sad that the party in my mouth was over.

Dinner

Fast Food Salad. Ā Yep, I am going there. Ā Listen. Ā We don’t do fast food very often but tonight we were running home well past dinner time with starving kids and somewhere to be in 30 minutes. Ā So, we ran through a drive through. Ā I didn’t want a restaurant salad because I had fresh organic spinach at home calling my name. Ā So, I bought a cheapo chicken buffalo sandwich. Ā We got it home and I threw out the bun diced it up. Ā I thew it over my spinach and sprinkled it with cheese. Ā No dressing necessary. The buffalo sauce was enough. Ā This is easy peasy for you to do with any sandwich or wrap or whatever tickles your fancy.

Rating: 9/10 stars. Ā I loved this! Ā I am only withholding a start because I took the easy way out. Ā But, we were super busy and I worked in my salad for dinner! So, I win!
