Breakfast
GranolaĀ Mashup: Ā I loved this one. Ā First, I diced some organic red delicous apples. Ā Then I put a banana into a ziploc bag and mashed it up. Ā I then mixed in with the apples to make it a little heartier and stick together. Ā Then I topped it off with Willamette Valley Granola in Blueberry Flax. Ā This stuff is so good and I would recommend it to anyone. Ā It’s crunchy without being too hard to chew and organic + GMO free too. Ā It pulled it all together and this was a great hearty breakfast before hitting the gym.
Rating: 9/10 stars. Ā Maybe a tablespoon of blueberry yogurt mix in as well would have been fab.
Lunch
Mahi Mahi Goodness: Ahh, I can’t think of a better name. Ā This one was inspired by a Fish Taco. Ā Yum! Fish Tacos! Ā It was easy peasy. Ā Start with a bed of 50/50 lettuce blend. Ā Then I diced up some fresh cherry tomatoes and white onion. Ā Then in a small pan I sauteed my Mahi Mahi fillet in light olive oil, fresh lemon juice, a little bit of black pepper and sprinked it with a whole lot of dill. (Dill makes everything better). Ā Then I sliced it and placed it on my salad using the liquid from the pan as a light sauce. Ā There is no other dressing on the salad other than more lemon juice that I squeezed on it. Ā I wanted it fresh and crisp!
Rating: 9/10 stars. Ā Maybe a light chipoltle based dressing would have been good as the lemon was a hair bitter. Ā But I still ate it all and would make it again!
Dinner
Red Pepper Beef Salad. Ā Another dinner hit that left Matt asking for seconds! Ā This was again easy Ā to throw together. Ā The base is fresh spinach. Ā It is drizzled very lightly with Ā a tablespoon ofĀ Annieās Organic Chile Lime dressing. Ā I had bought some extra lean stir fry beef at Sprouts. Ā I sauteed the beef with crushed red pepper and a dash of olive oil. Ā Then I threw in whole cherry tomatoes and sliced red peppers. Ā Not to fully cook but just to soften and warm. I thew it all over the spinach and served it warm. Ā It was so so so good! Ā Just the perfect level of spicy and the warm tomatoes were incredible on it.
Rating: 10/10 stars. Ā This was perfect. Ā Not greasy but a great source of protein and very filling. Ā Make this one! You will love it.
